Sweet treat saturday-Irish liqueur cupcakes

Ingredients

  • For the cupcakes:

  • 310g flour
  • 8 tbsp vanilla instant pudding mix
  • 1 tbsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 5 whole eggs
  • 2 tsp vanilla essence
  • 300g sugar
  • 85g sour cream
  • 2 tbsp mayonnaise
  • 30ml coffee liqueur
  • 1 tbsp mocha paste
  • Small chocolate pearls
  • Chocolate cigarettes
  • Edible gold dust
  • Vodka
  • For the Irish cream filling:

  • 148ml double cream
  • 118ml Irish liqueur
  • For the Irish buttercream:

  • butter, softened
  • 227g high ratio shortening

  • 4 tbsp vanilla essence
  • 2 tbsp lemon essence
  • 1 tbsp mocha paste
  • 4 tbsp cherry liqueur
  • 60ml Irish liqueur
  • 50ml coffee liqueur
  • 1 tbsp vodka

Method

How to make White Russian cupcake

1) Preheat the oven to 150C/Gas 2. Line the cupscups of a cupcake tin with 24 paper baking cases.

2) Combine the cake flour, pudding mix, baking powder, bicarbonate of soda and salt in 1 medium bowl. Crack the eggs into a second bowl and add the vanilla essence. Measure the milk and gold top milk into a third bowl. Stop the mixer and scrape down the sides with a spatula. Turn the mixer on first speed, add the sugar, and mix until fluffy.

3) Add the eggs 1 at a time. Scrape down the bowl. Add the sour cream and mayonnaise and incorporate completely. Scrape down the bowl. Add the dry ingredients, alternating with the wet, starting and ending with the dry ingredients. Mix the coffee liqueur and mocha paste into the batter until smooth and no lumps are present.

4) Using a 50g ice cream scoop, scoop 50g of batter into each paper case. Bake for 18 minutes. Insert a skewer into the cupcake, if it comes out clean they are ready to be removed from the oven. Leave to cool for 20 minutes.

5) Scoop out the centre of the cooled cupcakes with a melon baller. Fill a plastic bag with Irish cream filling and cut a small hole at one corner to allow the filling to be piped. Fill all the cupcakes with about 10g of filling.

To assemble the cupcakes:

2) Mix equal parts gold dust with vodka to make an edible gold paint. Using a small round brush, paint the ends of the chocolate cigarettes. The edible paint will dry leaving behind the gold dust.

For the Irish cream filling:
1) In a 5L mixer with the paddle attachment, add the double cream and Technique: WhippingA vigorous stirring motion to thicken cream or eggs with either a hand or electric whisk. I know this Teach me, pleasewhip to full volume.

2) Add the Irish liqueur and, on first speed, fold in the liqueur until completely incorporated.

For the Irish buttercream:

After adding all the sugar, put the mixer on the fourth (highest) speed and mix for 8 to 10 minutes. The buttercream will begin to gain volume and look white and fluffy. The longer you let it mix, the more volume you will have. If the buttercream is airy and shows a lot of holes, add a small amount of warm water and mix well.

2) Once you bring the buttercream to full volume, add the essences and the mocha paste. Lastly, add the liqueurs and vodka and incorporate completely

Peanut Butter Cup Cookies
Ingredients

3 cups all purpose flour
1 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
1-1/2 cups brown sugar – packed
1 cup granulated sugar
1/2 cup I Can’t Believe It’s Not Butter Spread – melted
1/2 cup Reese’s Spreads
2 tsp vanilla extract
2 eggs – room temperature
4 tbsp water
2-1/2 cups Peanut Butter Chips
Instructions

Preheat oven to 375 degrees
Combine flour, cocoa, baking soda & salt in medium size bowl- set aside
Cream sugars, I Can’t Believe It’s Not Butter & Reese’s Spreads
Add eggs, vanilla & water. Beat well
Add dry ingredients
Fold in peanut butter chips
Make tablespoon sized balls with the dough & place on baking sheet
Add a couple extra peanut butter chips to the tops
Bake 7-9 minutes
Cool on baking sheet 5 minutes before transferring to wire rack to completely cool.
Store in airtight container
*Makes approx 64 small cookies

Family time

So far i’ve had a busy Saturday. I went to visit my granddad, our moms dad. He got diagnosed with lung cancer a couple of weeks ago, and i hadn’t seen him since his diagnosis. He was in good spirits today. I brought him some lunch which he actually ate, which is a first for him as usually he barely eats anything. Since he had his stomach removed a few years ago, he cant eat a lot of foods because they make him sick. But he ate the lunch i brought him so that made me happy. He was showing our mom and sister old baby photos. He had some baby pictures of our mom, when she was 18 months old. He gave her a picture to keep, of her and her older brother visiting santa clause. Our mom was delighted. It was a good visit, even though we only stayed for an hour. We could only stay for an hour because our sister was parked in a place where you need a parking disk and the disk only lasts for 60 minutes. When we were leaving our granddad gave me the biggest hug and thanked me for lunch. It was so touching.

This evening i’m going to our aunts to watch x factor with her and also to see her new puppy. She named the puppy milly. This is the aunt who lost her dog Tess, about two weeks ago. I am so looking forward to seeing the new puppy. I love dogs and i bet she’s really cute. Plus it will also be nice to see my cousins and aunt and spend some quality time with them.

I’m really full up now. Our sister made a thai green curry which was totally awesome. It was really hot though so my mouth is burning now. There was some left over which i froze and am going to use up during this week. Our sister is a great cook and i love it when she cooks dinner for me.

Not much going on

Today was an all over the place kinda day. I woke up this morning feeling like crap. My throat hurt. My head hurt. I think I have the flu. So I ended up staying in bed for a long time, just laying there and trying to sleep but mostly just thinking about things. Dangerous for me as I end up with racing thoughts in no time. Eventually I got up, and ate some dinner. Our dad had made a lovely chicken curry. I have to say, our dad is an awesome cook. Our mom is lucky because usually he cooks on most days. And on the days when she does the cooking, he always prepares the meal so all she has to do is put it in the oven. After dinner I just hung out, not doing much of anything. I just watched some tv. Later on this evening our aunt moms sister phoned to ask mom and I if we wanted to go to her house for drinks. So we did. It was a good night. We just chatted and caught up on all the family news. Now its almost 2 AM and I’m just home. Tomorrow mom and us and our lil sister and her kids are going to a local garden centre for lunch, and because there is a fun day for kids. It should be a nice day and a nice start to the weekend.
