Buttermilk Smashed Potatoes
2 pounds baby red creamer potatoes
1/2 cup buttermilk
2 tbs salted butter
1/4 cup chopped chives
In saucepan, bring potatoes and enough salted water to cover to a boil. Cook 15 minutes or until
potatoes are tender. Drain.
In saucepan, cook buttermilk and butter 2 min. or until heated. Mash potatoes. Stir buttermilk mixture and
chives into mashed potatoes until combined. Season with salt, if desired.
